Creamy Tomato Bacon Bisque
Ingredients:
- 4 slices of bacon, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cans (28 ounces each) crushed tomatoes
- 1 cup chicken or vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 1/2 cup heavy cream
- Fresh basil leaves for garnish (optional)
- Grated Parmesan cheese for garnish (optional)
Instructions:
- In a large soup pot, cook the chopped bacon over medium heat until it becomes crispy. Remove the bacon with a slotted spoon and place it on a paper towel to drain.
- In the same pot, using the bacon drippings, add the chopped onion and garlic. Sauté until they become soft and translucent, about 3-4 minutes.
- Add the crushed tomatoes, chicken or vegetable broth, dried basil, and dried oregano to the pot. Season with salt and pepper to taste.
- Simmer the soup for about 15-20 minutes, allowing the flavors to meld together.
- Using an immersion blender or a regular blender (in batches), puree the soup until it’s smooth and creamy.
- Return the pureed soup to the pot and place it over low heat. Stir in the heavy cream and cook for an additional 5-7 minutes, allowing the soup to heat through.
- Serve the creamy tomato bacon bisque hot, garnished with the crispy bacon pieces, fresh basil leaves, and grated Parmesan cheese if desired.
