Creamy Tomato Bacon Bisque

Ingredients:

  • 4 slices of bacon, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cans (28 ounces each) crushed tomatoes
  • 1 cup chicken or vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1/2 cup heavy cream
  • Fresh basil leaves for garnish (optional)
  • Grated Parmesan cheese for garnish (optional)

Instructions:

  • In a large soup pot, cook the chopped bacon over medium heat until it becomes crispy. Remove the bacon with a slotted spoon and place it on a paper towel to drain.
  • In the same pot, using the bacon drippings, add the chopped onion and garlic. Sauté until they become soft and translucent, about 3-4 minutes.
  • Add the crushed tomatoes, chicken or vegetable broth, dried basil, and dried oregano to the pot. Season with salt and pepper to taste.
  • Simmer the soup for about 15-20 minutes, allowing the flavors to meld together.
  • Using an immersion blender or a regular blender (in batches), puree the soup until it’s smooth and creamy.
  • Return the pureed soup to the pot and place it over low heat. Stir in the heavy cream and cook for an additional 5-7 minutes, allowing the soup to heat through.
  • Serve the creamy tomato bacon bisque hot, garnished with the crispy bacon pieces, fresh basil leaves, and grated Parmesan cheese if desired.
